Pouilly Fume is another one of France's magnificent distinctive wines that cannot even be imitated anywhere else in the world. It should not be confused with Pouilly Fuisse which is made from the Chardonnay grape and Grown near Macon in Burgundy. Pouilly Fume is made from an entirely different grape, sauvignon blanc (sometimes called "Fume Blanc") and is from the upper Loire near Sancerre rather than the Macon are of Burgundy.

Pouilly Fume is a dry white wine with a distinctive smokier/herbier/flintier taste than Pouilly Fuisse and will go better with richer tasting fish such as salmon and tuna. Because of its distinctive flavor it is preferred with richer, creamier dishes (like a tetrazzini or a good sole Bon Femme). The wine is also magnificent as an aperitif with a spread of fine cheeses.

There is no place on earth that has the immense variety of soils that produce incomparable wines that occurs in France. The Loire is only one example. It The Loire begins in the Massif Central mountains in the center of France and cuts a slim slice through to the Atlantic. Sauvignon Blanc produces gems like the Pouilly-Fumé when mixed with Pouilly and Chasselas, Chenin Blanc becomes wines such as Vouvray, and in Muscadet the grape and the white wine both bear the area's name, although you may see the vines listed as Melon de Bourgogne. Cabernet Franc ferments into the red wine Bourgueil while Sauvignon and some Pinot Noir make the Sancerre wine The Pouilly-Fumé appellation and its unique taste comes from the Loire's unique soil. The relatively high acidity means it can stand up to more acidic foods (tomatoes, onions) than chardonnay can and it does even better at cutting through those creamy French sauces. Consequently, while it is a Chardonnay wine, it is a purely French variety whose taste cannot be duplicated anywhere else in the world.
